Seasoning Your Akorn Kamado Grill

Proper seasoning is essential to prepare your Akorn for great-tasting foods and long-lasting performance. Follow these steps to season before initial use and repeat the process at least twice per year:
  • Interior Coating: Lightly coat all interior surfaces, including grills, grates, and the inside of the barrel, with vegetable oil. Spray vegetable oil is convenient but should not be used near hot coals or fire.
  • Initial Burn: Build a medium-sized fire on the fire grate. Always place charcoal on top of the fire grate.
  • Heat Cycle: After coals ash over, spread them out, replace cooking grates, close the lid, and heat at approximately 250°F for two hours.
  • Re-coating Grates: Remove grates with oven mitts, allow them to cool, then re-coat with vegetable oil and return to grill at approximately 200°F for another two hours.
  • Exterior Coating: Lightly coat the exterior of the grill body with vegetable oil while warm to extend the finish’s life.

Tip:
Maintain a spray bottle of 100% vegetable oil nearby for a quick coat after each use. Seasoning is not a one-time process and should be repeated at least twice a year, depending on usage.

How to Clean Out AKORN Ash Pan

Regular cleaning of the AKORN ash pan is crucial for durability and performance.
  • Ash Pan Removal: Wait until the grill is completely cooled, unhook the latches holding the ash pan to the grill body, and slide it out. Empty into a metal ash bucket, ensuring all ash is removed before reattaching.
  • Post-Cook Maintenance: Empty the ash pan after each cook to prevent rust and maintain optimal performance.

How Much Fuel to Use

For Low & Slow Smoking (200-350°F):
  • Use about 1 lb of computer mouse-sized lump charcoal pieces
  • Build the fire in the center of the fire grate
  • Ignite coals, close lid and adjust dampers to desired temp
For High-Heat Searing (350-650°F):
  • Use 2-3 lbs of smaller, golf ball-sized lump charcoal
  • Build the fire in the center of the fire grate

Cleaning Carbon/Grease Buildup

It’s normal for grease and carbon to build up on the porcelain-coated Akorn lid and damper over time. This black debris may flake off but isn’t paint peeling. Simply:
  • Use a grill brush or scraper to remove stubborn carbon buildup
  • Or, clean the lid with warm, soapy water and dry thoroughly
  • Always re-season the lid after washing to prevent rusting

Lowering Temperature if It Gets Too Hot

If your Akorn’s temperature gets away from you, follow these steps to quickly bring it back down:
  • Close both the top and bottom vents to cut off airflow
  • Open the lid for 5-7 seconds to allow heat escape, then close and latch
  • Watch temp drop 20-50°F – temperature will start rising again after
  • Repeat opening lid for a few seconds until desired temp is reached
  • Once at temp, return vents to proper settings to maintain temperature
